Chris Burch settled for the beach-friendly grill approach applied by Chef Andres Morataya from Panama as he knew it would be perfect.
Chef Morataya’s Restaurant
Chef Morataya together with his wife operate Panga, a farm-to-table eatery, based in Panama. This restaurant has carved a niche of offering rare dining experiences that go beyond the plate. When the Moratayas were opening their restaurant, they ran into financial issues that threatened their purchasing power of a number of equipment they required. These financial constraints proved to be a blessing in disguise as they enabled Chef Morataya to discover a new and unprecedented way of cooking that he refers to as going back to the basics.
Morataya made his grill at both Burch’s house based in the Hamptons and in his restaurant from the ground up using driftwood and bricks. In the month of October, 2017 the chef will be taking his unique idea to the Nihi Sumba Island, a resort based in Indonesia and owned by Burch.
